This is one of my favorite desserts from Pampered Chef.. I LOVE IT!!!
1 pkg of refrigerate cookie dough
2 squares white chocolate for baking
1 pkg of cream cheese (8 oz)
1/4 cup of powdered sugar
1 cup thawed whipped topping
Favorite Fruit, Strawberries, Mandrain Oranges, Kiwi, Pineapple etc.
Roll Choc. Chip Cookie Dough onto a Pizza Pan. Roll til smooth.. Cook 12-15 minutes on 350 degrees.
Remove and let cool!
Mix in a Bowl, cream cheese (softened) and powered sugar. Mix well..
Microwave on high 2 squares of white choc. stil until melted and is smooth.
Combine white Choc into the cream cheese/ powered sugar mixture. Fold in whipped topping. Spread cream mixture over cookie dough!
Then place sliced fruits in a circle pattern on the cream mixture.
Slice and Serve!!

Apple Berry Salsa
2 med. Granny Smith Apples
1 pint. strawberries, diced ( 1 1/2 cups)
2 kiwi, peeled and diced
1 small orange
2 tbsp. packed brown sugar
2 tbsp. apple jelly or apricot jam
Combine Strawberries, Kiwi and Apples diced into a bowl. Zest orange to measure about 1 tsp. Juice orange to measure 2 tbsp. Add Orange zest, juice, brown sugar and jelly to the Fruit mixture.. Mix Gently, but well!!
Refrigerate, and then SERVE.. ENJOY!!!

2/3 cup mayo
2 tbsp. snipped fresh basil leaves
4 plum tomatoes, slices
Preheat the Oven 375 degrees
Roll Pizza crust on a rectangle pan. Sprinkle crust with 1 cup of Mozzarella cheese, set pan aside.
Take grated Parmesan cheese and remaining mozzarella cheese, mayo, basil and pressed garlic and mix well in a small bowl.
Slice 4 plum tomatoes (thin slices). Arrange tomato slices on the crust. Then scoop the Mixture from the bowl evenly over the Tomatoes on the pan.
Bake 15-20 minutes or until crust is golden brown.
Cut into squares, serve warm!!

1/4 cup. (of desired topping) black olives sliced, bell pepper sliced, etc
Preheat Oven to 350 degrees.
In Small Bowl combine cream cheese and seasoning mix. Spread on the bottom of small baking dish.
In another small bowl, combine mozzarella and parmesan cheeses.

This became our families Favorite this holiday season!!! :) Bake them to see why!!

1 3/4 cups of all purpose flour
3/4 cup. packed brown sugar
1 tsp. baking soda
3/4 cup of butter melted
1 cup. caramel ice cream topping (smuckers is the best, small jar)
1 pkg. semi-sweet choc. morsals
Preheat Oven to 350 degrees.
In a Rectangle Pan, spray with Pam, set aside.
In a Large Bowl, mix oats, 1 1/2 cup. of flour, brown sugar, and baking soda. Mix Well.
Add melted butter, mix until crumbly.
Reserve 1 cup or 3/4 cup of crumb mixture for the top.
Press all but reserve amount of crumbs into the bottom of the pan.
Bake 15 minutes. Golden Brown.
Combine ice cream topping and remaining 1/4 cup of flour in a small bowl. Whisk until smooth.

PULLED PORK
I love Pulled Pork when I order out at BBQ places, but I love making it home too.. It goes so much farther and you can even freeze some for later.
Buy 1 Boston Butt, (3-5 lbs, your choice)
Cook about 45 minutes per pound.
Place the Boston Butt in a Rectangle Pan, greased and cover with Foil.
Bake at 350 degrees for the time needed.
Open the Foil and with a fork, pull the pork for shredded pieces.
If desired, pour your favorite BBQ sauce and place back in the oven for about 10 minutes to cook the sauce in.
If not, then keep plain, and offer several sauces for dipping, pouring or putting on a sandwhich.
ENJOY!!

I used to love when my mom would make BarBQue Chicken and Yellow Rice for Dinner!! Still a favorite, I love making it now for my Husband!!
1 pkg of Drumsticks (about 3-4)
1 pkg of Thigh, Breast pieces (2-3 each)
Preheat Oven to 325-350 Degrees
In a large Rectangle Pan place pieces of Chicken into the pan. Pour 1 cup of Water over the Chicken. Then pour your favorite BarBQue Sauce over the chicken, making sure each piece is covered, and some sauce is in the bottom of the pan.
Cook for about 30-40 minutes, or until the sauce is getting cooked and dark over the chicken.
Take out and serve over Yellow rice... use sauce in the bottom of the pan over Rice!!
ENJOY!!

2 tsp. chopped green onion (to top butter)
1/2 tsp. fresh lemon juice
1/4 tsp. ground black pepper
Combine Butter and Blue Cheese crumbles in a small bowl. Add green onion, lemon juice, and black pepper. Mix well until blended..
Serve in a small bowl to add to desired foods!

M&M Cookies
This recipe is one of my Childhood favorites!! My Mom made these every holiday, and when I started learning to bake, it was a tradition to make every Christmas!! I enjoyed making them and began my love for baking, with my mom making these!!

1 pkg. (15 oz) M&M plain
1 pkg. (15 oz) M&M peanut
1 cup. Margarine
3/4 cup Sugar
3/4 cup brown Sugar
2 eggs
1 tsp. Vanilla
2 1/2 cup of Flour
1/2 tsp. Baking Soda
1/2 tsp. Salt
Preheat oven to 350 degrees
Chop Pnut M&M's. Beat Margarine, sugars until Fluffy, then blend in eggs, and vanilla.
Combine in another bowl, Flour, Soda and Salt. Stir into Sugar Mixture. Stir chopped pnut M&M's. Drop by the tbsp. full onto cookie sheet.
Top w/ plain M&M's. Bake in preheated oven 9-11 minutes until lightly golden.

This dessert is from my sister, Rachel Carter.. BUT amazingly delicious!
3-4 Apples (your choice of green or red)
2 Tsp Lemon Juice
1 cup Brown Sugar
1/2 cup of Water
3/4 cup Flour
1 tsp Cinnamon
1/2 cup of Butter ( 1 stick) (cold, diced into small pieces)
Preheat Oven to 350 degrees.
Core Apples (wedges or diced), place into a greased baking dish.
Combine water & lemon juice, pour over apples.
Stir flour, sugar, butter and cinnamon with a fork. Pour over apples.
Bake 30 Minutes!!

Chicken Spaghetti
MY FAVORITE!! I love anything Pasta, but this is my mom's and my favorite growing up.
Other great note, it makes a lot, and not that expensive to make. So a great thing for when you have company!!!
1 whole chicken (cooked and diced)
1 16 oz. box of spaghetti (angel hair is the best)
1 large jar of sauce (of your choice)
1 can. diced/stewed tomatoes
2 tsp. worchestershire sauce
1 can of mushroom soup (optional, I don't USE)
1 bag frozen onions and pepers (optional again, I don't USE)
Mozerella Cheese
Cook Chicken, and dice.
Preheat Oven to 350 degrees.
Cook Pasta in Chicken Broth (from cooking the chicken). Drain the Pasta.
Add all ingredients (but the cheese) into the pasta pot.
Stir in the Chicken. Pour all into Large Glass Dish.
Bake 35 minutes, Add Cheese the last 15 minutes.
Or Pour into 2 small Glass Pans and you can freeze small dish for a later use.
ENJOY!!

Another great idea with a warm grilled cheese on a cold day!!
1 can 29 oz. Tomato Sauce
2 can Red Kidney Beans (dark)
2 can Red Kidney Beans (light)
2 can Chili Beans (spicy)
1 pound or little over a lb. Ground Beef
1 pack of (mild) Chili Powder
1 tsp of Chili Powder (optional)
Brown the Beef and Drain, set aside.
In a Large Pot, pour Tomato Sauce and Seasoning and Mix on Medium Heat. Stir. Combine all cans of Beans, (drain all but 2 cans of the juices). 2 Cans can be used with the juice poured into the mixture. Add the Meat and if you desire Chili powder. Stir well. Cook for 10-15 minutes, then reduce to low simmer until ready to serve and eat.
Serve with Saltines or Grilled Cheese..

This is my favorite reminder of Thanksgiving!! This recipe was passed to me from my mom!! I love this casserole, and it works with so many meals...

1 cup of grated cheddar cheese
1/2 cup of Mayo
1 large Onion or 1/2 cup of frozen onion diced

Add all ingredients together into a 9 x 13 baking dish. Top with bread crumbs and extra cheese.
Bake 35 minutes :)

This is a huge Favorite of our Families. WE love Cuban Sandwhiches and of course Spanish Bean Soup. Try this on a cold day.. It is amazing!!!
1 tsp. EVOO (extra virgin olive oil)
1 1/2 oz. sausage (diced)
3 cloves of garlic
1 cup of frozen seasoning blend
1 can of (15 oz) Chick Peas
1 cup of diced potatoes (cooked or frozen)
1 can of Chicken Broth (14 oz)
1 1/2 cup of water
1 pkg. Sazon Seasoning
Preheat large sauce pan on Med. Heat. Add Oil to coat the bottom of the pan.
Add Sausage, crush garlic, and add. Stir in season mix. Cook 6-8 minutes, stir occasionally until veg. are tender. Stir in remaining ingredients. Cover, bring to a boil 10-12 minutes. Stir Occasionally.

Cheese Ball
Cheese Ball, this is a great recipe if you are planning on entertaining, or hosting a party of some kind. This is wonderful with a few added crackers!!!
This was passed down from my Aunt Patti.. (our famous family Cheese Ball.)
2 (8 oz) cream cheese
2 green onion chopped
1/2 jar dried beef (small jar)
1 cup of mayo
1/2 tsp. worchestershire sauce
dash of garlic salt
1 cup of crushed pecans
Mix together- everything but the pecans. Chill for 30 minutes.
Pour Pecans on a plate, set aside. Roll Into a Ball the Mixture. Then Roll the Ball into the Pecans, until top and sides are completely covered.
Cover, and chill until ready to serve.

Brownie/Peanut Butter Truffle
For Patrick's Birthday I wanted to make a dessert that he would really enjoy. He loves Brownies, and Reese's and Peanut Butter Pie.. So I came up with a Truffle Cake that was like a huge creamy Reese's.
1 Box of Family Size Brownie Mix
2 8oz. of Cool Whip
1 cup of Powdered Sugar
1/2 cup of Peanut Butter
1 3oz. of cream Cheese
1 tsp. Vanilla
1 bar of Chocolate for decoration
Mix Brownie mix as directed and Back.. Make sure to leave it soft and not let the brownies get cake like or hard.
Let Cool. Once Cooled, Cut into inch squares.
With mixer, mix together cream cheese and peanut butter. Add Vanilla and sugar and mix well until blended. Fold then cool whip into the Peanut Butter mix. Fold until turns light brown and smooth.
In Truffle Bowl or large Dish. layer bottom of the dish with Brownie pieces. Trying to break the pieces if necessary to fill the bottom completely. Layer on top Cream Filling and make sure it is covered. Then Layer the Brownies on the Cream and Repeat with Cream Filling again. Then one last layer of Brownies. I then put a thin layer of cream on top of that and then a thin layer of Cool whip! Take your Chocolate Bar and shave over the top of the Cool Whip.
Place in the Fridge to Cool until you Serve... ENJOY

Mt. Dew Cake
Mt. Dew cake was passed to me from my sister. This recipe is VERY GOOD! But of course I love Mt. Dew!! It almost is like a soft pound cake!!!
There are 2 different recipes, one is simple and less expensive. But both are great!!
1st: Original Recipe
3. cup sugar
5 eggs
3/4 cup mt. dew
1 1/2 cup butter
3 cups of Flour
2 tsp Lemon extract
powedered sugar
Preheat oven to 325 degrees
Cream Sugar and butter until light and fluffy. Add eggs, one at a time, beat well.
Add Flour and Mt. Dew
Add Lemon Extract
Bake in a greased tube pan for 1 hour 15 minutes. let Cool.
Pour Mt. Dew over cake for extra flavor. Use a small amount of Mt. Dew and Powdered sugar to make an icing to pour over the cake.
2nd: A little more Simple.
1 box. of Lemon Cake Mix ( I used Yellow Cake Mix)
1 box. lemon Instant Pudding
1 can of Mt. Dew
1/2 cup of Oil
4 Eggs.
Powdered sugar

Chocolate Cake with Chocolate Icing
My Husband Loves Chocolate Cake!!! This makes a very moist amazing Cake!!
(for Icing I use Betty Crocker, Whipped Chocolate)
2 cups of Sugar
1 3/4 cups of Flour
3/4 cups of Hershey's Cocoa (or any brand Cocoa)
1 1/2 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. salt
2 eggs
1 cup of Milk
1/2 cup vegetable oil
2 tsp. Vanilla Extract
1 cup Boiling Water
Preheat Oven to 350
Grease 2 9inch pans, or Angel Food Dish, or Bundt Pan
Stir, sugar, flour, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla.
Beat at Medium Speed for about 2 minutes.
Pour in Boiling Water. (will be very thin)
Stir completely.
Pour into Greased Pan(s)
Bake 30-35 minutes for Pans
35-40 for Bundt or Angel Pan
Cool for 10 Minutes , then Ice
ENJOY :)

Date Casserole
This is one of my favorite Recipes!! :) I call it Date Casserole, but you can call it whatever you would like.
3-4 Chicken Breasts
1 can. of Cream of Mushroom Soup
6-8 Slices of Bacon
1 8 oz. Sour Cream
1 jar of Dried Beef (need only 6-8 slices)
Preheat Oven to 350
Take Chicken Breasts and Wrap in the Bacon.. (I wrap one around and then one the opposite way, to fully cover with Bacon).
Place slices of Dried Beef to layer the bottom of a Glass Casserole Dish.
Place your Wrapped Chicken on the Beef.
Mix Sour Cream and Mushroom Soup together, until well blended.
Cover Chicken with the Soup mixture.
Place in Oven and Cook 30-40 Minutes.
ENJOY :)

Marinated Steaks
I change how I marinate my Steaks each time.. but this is one..
Steak Seasoning Juice (Publix Brand)
1-2 tbsp. of A-1 Sauce
1-2 tsp. Garlic Salt
a little Salt and Pepper
2 tbsp. of McCormick Grill Mates, Montreal Steak Seasoning
Cover Steaks in a Bowl, and Sit for 1-2 Hours in the Refrigerator.
Take out, place on Grill and ENJOY :)

9 in. Pie Shell or Chocolate Gram Crust Shell
1/2 cup. Butter (softened)
3/4 cup. Sugar
1 tsp. vanilla Extract
1 1/2 squares of semi-sweet chocolate
2 eggs
8 oz. Cool Whip
Beat Butter, Sugar and Vanilla until Light and Fluffy.
Melt Chocolate and Cool. Add Chocolate into Mixture and beat for 5 Minutes!!
Add eggs, ONE AT A TIME, beating 10 Minutes after EACH egg.
(beating is the key to this recipe)
Fold in Cool Whip.
Pour into Shell.
Chill for 12 hours.

This Recipe is from a previous Co-worker of mine, Whitney Barefoot!!

1 lb. of Sausage
2 cups. of Cheddar Cheese
1 stick of Butter
3 eggs
Thoroughly cook grits in water in a large pot.
Brown Sausage completely in frying pan.
Drain Sausage.
Add cooked sausage to grits, and mix well.
Add Butter, and Cheese.
Mix until Melted.
Stir in Eggs last.
Pour into 8x8 pan. Refrigerate overnight.
Cook on 350-375 degrees. Cook for 30-45 minutes, or until it begins to bubble.

Cook Cubed Potatoes in large pot. Boil for about 10-13 minutes.
Ready when you can put a fork in them easily.

Hashbrown Casserole
This is our Family Recipe! We back this every Christmas morning for our Christmas Brunch. It is so good, and great for a Saturday Brunch time!!!
1 cup. diced onion (frozen)
1/4 cup. butter
1 (8 oz.) Sharp Cheddar cheese
1 can cream of Mushroom Soup
1 (8 oz.) Sour Cream
1 2 lb. bag of Hashbrowns (not shredded)
Preheat Oven 350 degrees
Stire Onion, Sour Cream, Cheese, Butter and Soup.
Add Hashbrowns (thawed out)
Add Salt and Pepper to taste.
Top with Extra Sharp Cheese
Bake for 1 1-1/2 Hours.. ENJOY :)

1/2 cup red bell pepper, Chopped
1 garlic clove pressed or use garlic seasoning
4 oz. Sharp Cheese, Shredded (1 cup)
1/2 cup. Mayo
2 tsp. dill mix
2 packages cresent rolls
1 egg white
2 tbsp. slivered almonds
Preheat over 375 degree
Mix Chicken, Broccoli, Red Pepper, Garlic, Cheese, Dill Mix and Mayo in bowl.
Unroll Cresents. Do not seperate. Roll with Rolling Pin to smooth out all lines and make smooth on a Pan. Take a knife about 2 inches in, about every 2 inches along both sides of the dough.
Fill the middle of the dough with Filling. Pull over the pieces of dough and twist to middle. It will look like a braid.
Top with Egg White and Almonds
Cook for 25-28 minutes.

This Recipe I found while I was doing Pampered Chef! I love it so much!!!
So I wanted to share!
1-1 1/2 lb. Hamburger Meat
1 package taco seasoning mix
1 cup. Shredded Cheese (Cheddar)
2 tbsp. Water
2 packages of cresent rolls
1 cup of Salsa
3 cups. Lettuce Shredded
1 Medium Tomato (diced)
Sour Cream
1 cup. Black Olives
Preheat oven to 375 degrees.
Cook Meat til browwn on the stove. Drain. Add water, and mix with Cheese. Stir on low until melted.
Unroll Cresents, place on a round Pizza pan.
Take each Triangle and place point haning off the edge of the pan, and the middle making a circle on the pan.
Scoop Meat around the inside of the dough circle. Cover Meat by pulling the edges back over the meat and making a Wreath.
Cook for 20-25 minutes until Golden Brown
Place Lettuce, Tomatoes, Salsa, Sour Cream and Olives in the middle of the ring, Cut and SERVE!

Peanut Butter Pie
I got this Recipe from Patrick's Mom. And it is absolutely AMAZING!!!
1 cup Confectioner's Sugar
1/2 cup Peanut Butter
1 3oz. Block Cream Cheese
1 tsp. Vanilla
1 8 oz. Container Cool Whip
1 8 inch. Graham Cracker Crust
With Mixer on low speed, mix together cream cheese and peanut butter. Add vanilla and sugar to cream cheese mixture and mix until well blended. Fold in cool whip until fluffy. Pour into pie crust and chill until set, or over night.
AMAZING!!!
I added a few of my twists.... I cut in half Mini Reese's Cups and decorated the top, and then with Cheese Grater, take a Semi Sweet Cooking Bar and Shave some on top to decorate as well!!!

Haystacks is a fun twist to mexican taco salad.
1 bag of Dorritos (orginal flavor)
1- 1 1/2 lb. Hamburger meat
1 packet of Taco Seasoning Mix
Lettuce
Tomato
Mexican Cheese
Italian Dressing
Sour Cream
Salsa
Brown Hamburger meat in frying pan. Drain and add water and mix as directed on the packet. Cook as you would for Tacos.
In each person's bowl. Crushed Dorritos to cover the bowl of each bowl, (or as much as desired). Cover with meat, and then add lettuce, tomato and cheese.
Add as desired, a spoon of sour cream and salsa. Then top with Italian Dressing.
Mix Well.. Serve :)

This recipe was fun to make. I took a Chicken and Mushroom Soup Recipe and added Italian Seasoning and Garlic Salt with E.V.O.O. It turned out great!!
Here is the Recipe
2-4 Boneless Chicken Breasts
1 can of Cream of Mushroom Soup
1-2 tbsp of Italian Seasoning
1-2 tsp of Garlic Salt
2 tbsp of E.V.O.O
Serve with: Vegetable of choice and Rice
In Skillet on High add E.V.O.O with salt and seasoning. When the mixture begins to bubble, add chicken to coat and Brown. Once Chicken is Brown remove from the Skillet and cook for a few minutes.
Add Cream of Mushroom Soup and small amount of water. Place on heat and turn to Medium Heat. Let Boil. Reduce heat and simmer for 10-12 minutes.
Serve over the Rice
