Chocolate Chip Cookie/ Fruit Pizza

This is one of my favorite desserts from Pampered Chef.. I LOVE IT!!!

1 pkg of refrigerate cookie dough
2 squares white chocolate for baking
1 pkg of cream cheese (8 oz)
1/4 cup of powdered sugar
1 cup thawed whipped topping

Favorite Fruit, Strawberries, Mandrain Oranges, Kiwi, Pineapple etc.

Roll Choc. Chip Cookie Dough onto a Pizza Pan. Roll til smooth.. Cook 12-15 minutes on 350 degrees.

Remove and let cool!

Mix in a Bowl, cream cheese (softened) and powered sugar. Mix well..
Microwave on high 2 squares of white choc. stil until melted and is smooth.
Combine white Choc into the cream cheese/ powered sugar mixture. Fold in whipped topping. Spread cream mixture over cookie dough!
Then place sliced fruits in a circle pattern on the cream mixture.

Slice and Serve!!

Apple Berry Salsa

2 med. Granny Smith Apples
1 pint. strawberries, diced ( 1 1/2 cups)
2 kiwi, peeled and diced
1 small orange
2 tbsp. packed brown sugar
2 tbsp. apple jelly or apricot jam


Combine Strawberries, Kiwi and Apples diced into a bowl. Zest orange to measure about 1 tsp. Juice orange to measure 2 tbsp. Add Orange zest, juice, brown sugar and jelly to the Fruit mixture.. Mix Gently, but well!!

Refrigerate, and then SERVE.. ENJOY!!!

Tomato Basil Squares

1 pkg (10 oz) pizza crust
2 cups. (8 oz) shredded mozarella cheese
1/4 cup grated fresh Parmesan cheese
2/3 cup mayo
2 tbsp. snipped fresh basil leaves
4 plum tomatoes, slices

Preheat the Oven 375 degrees

Roll Pizza crust on a rectangle pan. Sprinkle crust with 1 cup of Mozzarella cheese, set pan aside.

Take grated Parmesan cheese and remaining mozzarella cheese, mayo, basil and pressed garlic and mix well in a small bowl.

Slice 4 plum tomatoes (thin slices). Arrange tomato slices on the crust. Then scoop the Mixture from the bowl evenly over the Tomatoes on the pan.
Bake 15-20 minutes or until crust is golden brown.

Cut into squares, serve warm!!

HOT PIZZA DIP

1 pkg (8 oz) cream cheese, softened
1 tsp. Italian seasoning mix
1 cup. (4 oz) Shredded mozarella cheese
3/4 cup. (3 oz) grated fresh Parmesan Cheese
1 can (8 oz) pizza sauce
1/4 cup. (of desired topping) black olives sliced, bell pepper sliced, etc

Preheat Oven to 350 degrees.
In Small Bowl combine cream cheese and seasoning mix. Spread on the bottom of small baking dish.

In another small bowl, combine mozzarella and parmesan cheeses.
Pour half of the Cheese mixture over the cream cheese mixture in the baking dish, save the rest of the cheese mixture for later use.
Top in the dish with pizza sauce and spread evenly. Sprinkle now the remaining Cheese mixture over the sauce.
Bake 15-20 minutes, or until bubbly.
Top with your favorite topping, and cook 3 more minutes.

Serve with chips, crackers or toasted bread!

Chocolate Caramel Oatmeal Chews or Special Bars

This became our families Favorite this holiday season!!! :) Bake them to see why!!

2 cups quick or old-fashioned oats
1 3/4 cups of all purpose flour
3/4 cup. packed brown sugar
1 tsp. baking soda
3/4 cup of butter melted
1 cup. caramel ice cream topping (smuckers is the best, small jar)
1 pkg. semi-sweet choc. morsals

Preheat Oven to 350 degrees.

In a Rectangle Pan, spray with Pam, set aside.
In a Large Bowl, mix oats, 1 1/2 cup. of flour, brown sugar, and baking soda. Mix Well.

Add melted butter, mix until crumbly.
Reserve 1 cup or 3/4 cup of crumb mixture for the top.
Press all but reserve amount of crumbs into the bottom of the pan.
Bake 15 minutes. Golden Brown.

Combine ice cream topping and remaining 1/4 cup of flour in a small bowl. Whisk until smooth.
Drizzle over the crust, and spread to cover.
Take crumbs and sprinkle over the caramel mixture.
Bake 15-18 minutes or until golden brown/bubbly.


Cook completely, and cut into bars!

PULLED PORK

I love Pulled Pork when I order out at BBQ places, but I love making it home too.. It goes so much farther and you can even freeze some for later.

Buy 1 Boston Butt, (3-5 lbs, your choice)

Cook about 45 minutes per pound.
Place the Boston Butt in a Rectangle Pan, greased and cover with Foil.
Bake at 350 degrees for the time needed.

Open the Foil and with a fork, pull the pork for shredded pieces.
If desired, pour your favorite BBQ sauce and place back in the oven for about 10 minutes to cook the sauce in.
If not, then keep plain, and offer several sauces for dipping, pouring or putting on a sandwhich.

ENJOY!!

(don't forget you can freeze some of it as well for a later use!)

BarBQue Chicken Pieces

I used to love when my mom would make BarBQue Chicken and Yellow Rice for Dinner!! Still a favorite, I love making it now for my Husband!!

1 pkg of Drumsticks (about 3-4)
1 pkg of Thigh, Breast pieces (2-3 each)

Preheat Oven to 325-350 Degrees

In a large Rectangle Pan place pieces of Chicken into the pan. Pour 1 cup of Water over the Chicken. Then pour your favorite BarBQue Sauce over the chicken, making sure each piece is covered, and some sauce is in the bottom of the pan.
Cook for about 30-40 minutes, or until the sauce is getting cooked and dark over the chicken.

Take out and serve over Yellow rice... use sauce in the bottom of the pan over Rice!!

ENJOY!!

Bacon, Lettuce & Tomato Dip

1 pkg (8 oz) cream cheese (softened)
1/2 cup. Ranch Salad Dressing
1 med. Tomato, (seeded and diced (about 3/4 cups)
6 bacon slices, cooked and chopped
1/2 cup. finely chopped celery
2 tbsp. finely chopped onion (or thawed frozen diced onion)
1 tsp. sugar

Combine in a bowl, Tomato (diced and seeded), bacon, celery, onion and sugar to cream cheese mixture. Mix Well. Cover and refrigerate at least 3 hours.

Serve on some lettuce for decoration and pita chips or crackers.

Homemade Baked Pita Chips

Great for dipping!

7 whole pita bread rounds


Preheat the oven to 375 degrees.
Cut each Pita into 8 triangles with Pizza cutter. Arrange in a single layer on a greased cookie sheet. Bake 8-10 minutes or until lightly browned.
Repeat til all chips are cooked. Cool on the Cooling Rack.

Serve with Dips, ENJOY!!

Blue Cheese and Herb Butter

Great for serving over Baked Potatoes, or Steaks!
This flavored Butter, adds that extra special flavor to a regular meal.

1/4 cup of butter, softened
2 tbsp crumbled blue cheese
2 tsp. chopped green onion (to top butter)
1/2 tsp. fresh lemon juice
1/4 tsp. ground black pepper

Combine Butter and Blue Cheese crumbles in a small bowl. Add green onion, lemon juice, and black pepper. Mix well until blended..

Serve in a small bowl to add to desired foods!

ENJOY!!

ALL- IN -1 OVEN CHICKEN DINNER

This is such a simple Dinner and SOO GOOD!!

You can do this with Fish or Chicken!! (And make two different kinds of meals)

2-3 Large Potatoes
1-2 Cans of Corn
1-2 Cans of Green Beans or Peas
3-4 Chicken Breasts or Fish
Tin Foil
Salt and Pepper

Tear a Piece of Tin Foil and place Chicken or Fish in the middle, and put diced/cubed Potato, Green Beans or Peas/ and Corn around Chicken or Fish.
Cook in Oven on 350 degrees... About 20 minutes for Chicken, and time for Fish as on directed on package. Close Tin Fold together in center, make a pocket.

Open and pour on a Plate... Serve and ENJOY!!

M&M Cookies

This recipe is one of my Childhood favorites!! My Mom made these every holiday, and when I started learning to bake, it was a tradition to make every Christmas!! I enjoyed making them and began my love for baking, with my mom making these!!
Hope you enjoy them just as much!!

(now with all the different colors, and holiday packages of M&M's you can make them for so many different holidays now!!)

1 pkg. (15 oz) M&M plain
1 pkg. (15 oz) M&M peanut
1 cup. Margarine
3/4 cup Sugar
3/4 cup brown Sugar
2 eggs
1 tsp. Vanilla
2 1/2 cup of Flour
1/2 tsp. Baking Soda
1/2 tsp. Salt

Preheat oven to 350 degrees

Chop Pnut M&M's. Beat Margarine, sugars until Fluffy, then blend in eggs, and vanilla.
Combine in another bowl, Flour, Soda and Salt. Stir into Sugar Mixture. Stir chopped pnut M&M's. Drop by the tbsp. full onto cookie sheet.
Top w/ plain M&M's. Bake in preheated oven 9-11 minutes until lightly golden.

Amazing Apple Crisp

This dessert is from my sister, Rachel Carter.. BUT amazingly delicious!

3-4 Apples (your choice of green or red)
2 Tsp Lemon Juice
1 cup Brown Sugar
1/2 cup of Water
3/4 cup Flour
1 tsp Cinnamon
1/2 cup of Butter ( 1 stick) (cold, diced into small pieces)

Preheat Oven to 350 degrees.

Core Apples (wedges or diced), place into a greased baking dish.
Combine water & lemon juice, pour over apples.
Stir flour, sugar, butter and cinnamon with a fork. Pour over apples.
Bake 30 Minutes!!

Serve with: Cool whip or Ice Cream!
